The Best Chopped Salad

On warm summer days, a chopped salad makes a fresh and delicious meal. Amanda of Marshalls Abroad agreed to share her favorite recipe, which she describes as an "amazing burst of flavor"...
The Best Chopped Salad You'll Ever Have

The beauty of this chopped salad is its fresh, local and seasonal ingredients. If strawberries are no longer present at farmers' markets or grocery stores in your area, substitute blackberries, raspberries, pears, nectarines, plums or figs. The possibilities are endless, and the result is an amazing burst of flavor when paired with the avocado, gorgonzola, chicken and tangy lemon-garlic dressing.

I love this salad for parties, both for the presentation of the chopped ingredients in various bowls, and for the convenience of having a dish with choices that work well for many different people. You can toss this salad as one big dish, or toss individual salads depending on your guests’ tastes. It’s a wonderful and quick meal for this time of year, when you’d rather be outside soaking up the last days of summer.

Recipe: End-of-Summer Chopped Salad
Serves 4 (unless your husband is 6'6" like mine and can eat half of it on his own)

You'll need:
1 large head of crunchy romaine lettuce, rinsed and chopped
1 cup strawberries, chopped
2 avocados, chopped
6-8 oz. Gorgonzola cheese, crumbled
1 cup walnuts
1 cup cooked chicken, chopped
1 cup cooked bacon, chopped
1 cup apples, chopped
1 cup red onion, chopped
1 cup grapes, halved
1 cup oranges, chopped

For the dressing:
2 ripe lemons
4 cloves of garlic, crushed
1/2 cup extra-virgin olive oil
1/8 cup red wine vinegar
1/4 cup honey
1 tsp. Dijon mustard
Fine sea salt, to taste

What to do:
Arrange each of the chopped salad ingredients in separate bowls. For the dressing, squeeze the lemons directly into a mixing bowl to allow any pulp to come out. Whisk with the garlic, olive oil, red wine vinegar, honey, mustard and a pinch of salt. Taste, and add more salt as needed. If the dressing is too tangy for your taste, add more honey. Toss the salads when ready to eat. Enjoy!

NOTE: If serving more than four people, just double this recipe.

It looks delicious although I usually prefer only 3-4 flavours in one salad. I think a combination of walnuts and gorgonzola may be surprisingly good though so I'll give it a try next weekend!

nothing like a good chopped salad! i've been making one very similar to this with chopped tofu, hard boiled eggs, avocado, tomatoes, cucumber, green onions, feta and a bit of barley. fantastically addictive!

This is such a gorgeous salad! It makes me want to organize a women's picnic and have all of the ladies bring ingredients and dine outside with sparkling water and girly napkins. ;)

This looks so good! I always fall back on romaine, walnuts, goat cheese, and grapes. Strawberries would be great though, and bacon is always a plus.

Crikey, talk about overkill - too many ingredients for my taste; I find with too many different flavours it just tastes argument! I'll probably halve the number of ingredients :-)

When I married my husband I was already pregnant and so I didn't have a job. He had a really good job though so I was able to stay home and take care of our son when it was born. When we had our second child we moved to a bigger house, but then strange things started to happen. Things would fly off the walls and doors would slam at night. Our oldest son talked about seeing figures and hearing voices. We consulted a medium and they said the house was haunted. After living there about a year more with only minor occurrences we moved out. That was when the bad luck started to happen. Everything started to fail, with my husband's job, our money and our luck in general. I went back to the same medium and they told me that a spirit had followed me and placed a curse upon me for disturbing it and not being respectful in the previous house. He tried to remove it but was unable. The misfortune kept going on and getting more severe as I tried to search out someone to break the curse. But when I found Dr.Azonto spell he finally did it. Things started turning around almost immediately after he cast the spell and have been great from there! This was really a miracle for us, thank you . spell from the bottom of my heart!

We love to have "Build Your Own Salad" nights for summer dinners. We fill the table with all kinds of fresh and yummy things for a perfect hearty salad. We all stock our plates full of our favorites (and leave out the things we don't like). It helps appease my three picky little boys and makes salad for dinner much more fun. These look like perfect ingredients for a build your own salad night. I'll try it next time.
