The Best Citrus Salad You'll Ever Have

Today is officially the first day of spring! Even though it's still freezing outside, at least we know daffodils and sunshine are around the corner, right? (Right?!) To help welcome those breezy spring days, Erin Gleeson of The Forest Feast is sharing her recipe for citrus salad, which would be perfect for a picnic...
The Best Citrus Salad You'll Ever Have
By Erin Gleeson of The Forest Feast

I love this dish because it's a great mix of sweet and savory—plus it's so colorful! The juice from the citrus creates its own dressing with the olive oil and herbs. This dish is great for breakfast, lunch or dinner. Enjoy!

Recipe: Citrus Salad with Mint, Basil and Red Onion
Serves 4

You'll need:
2 oranges (If you can find blood oranges or Cara Cara oranges, these are fun and colorful to use, as well)
1 grapefruit
2 clementines
A few sprigs each of mint and basil
1 small red onion
2 tbsp. extra virgin olive oil
A pinch of coarse sea salt

Peel all the citrus and slice them into 1/4-inch rounds. Layer the citrus on a platter (or on four separate plates), alternating different types. Chop the mint and basil and sprinkle about. Peel and very thinly slice the red onion into circles and disperse on top. Drizzle olive oil (at least 2 tablespoons) over the dish, plus a pinch or two of sea salt.
YUM! Thank you, Erin!

P.S. More best recipes, including avocado salad and panzanella.

I have made a similar salad and I will say that it is DELICIOUS. Especially with some Greek green olives with pits scattered over the top.

I am taking the citrus and herbs and ditching the red onions. Preggo belly occupant does not like that. But i think that PARSLEY and LEAKS would be an amazing addition, yes?

I would have NEVER thought to include red onion! But it seems a shame to leave such a beautiful addition out. So pretty!

Take care,

Looks great! I will say that I'm a bit disappointed the series has strayed away from the classics; I liked the notion of a "best-of-the-best" recipes for those tried and true dishes (Mac & Cheese, Chocolate Chip Cookies, etc).

I love the Forest Feast's recipe posts, though! A-maze.

That looks delicious! But I'm still with the soup mode on. In the North of germany, where I live, the weather is... well, let's say that it's still Winter. I hope that the day or two in mid June that can be considered Spring we will be able to run to the park and celebrate with a picnic!

I love citrus salads for a nice pick-me-up especially when winter seems to go on longer than it should.

I like to add kalamata olives to mine. Also, to cut the bite from the red onions, I'll soak them in ice water for about 5 minutes.

Hi Everyone im Vanessa. Just wanted to thank Dr Wicca for all his help in bringing back my ex because ever since we broke up, life became harder. Work became a chore. A job I used to love. I stopped seeing my friends. I stopped answering emails and the phone. I felt I was sinking in despair. I was overwhelmed with regret, embarrassment, hurt, frustration and images of him and his new girlfriend. I tried dating but no one was like him. All I did was think about my ex while I was out, so I completely stopped dating anyone. My break up was totally ruining my life. I was gaining weight and my hair was starting to fall out because I was not taking care of myself.I have to look online for help when i saw post on how Dr Wicca has help them, so i confirm if this is for real from people he has help and yes he is real.
I am happy to report that my Ex and I are now happily back together. I have to say it was effortlessly done by Dr Wicca! whatever problem you are experiencing. You can contact him on dr.wiccahightemple@gmail.com or find him on facebook
