The Best Citrus Salad You'll Ever Have

Today is officially the first day of spring! Even though it's still freezing outside, at least we know daffodils and sunshine are around the corner, right? (Right?!) To help welcome those breezy spring days, Erin Gleeson of The Forest Feast is sharing her recipe for citrus salad, which would be perfect for a picnic...
The Best Citrus Salad You'll Ever Have

I love this dish because it's a great mix of sweet and savory—plus it's so colorful! The juice from the citrus creates its own dressing with the olive oil and herbs. This dish is great for breakfast, lunch or dinner. Enjoy!

Recipe: Citrus Salad with Mint, Basil and Red Onion
Serves 4

You'll need:
2 oranges (If you can find blood oranges or Cara Cara oranges, these are fun and colorful to use, as well)
1 grapefruit
2 clementines
A few sprigs each of mint and basil
1 small red onion
2 tbsp. extra virgin olive oil
A pinch of coarse sea salt

Peel all the citrus and slice them into 1/4-inch rounds. Layer the citrus on a platter (or on four separate plates), alternating different types. Chop the mint and basil and sprinkle about. Peel and very thinly slice the red onion into circles and disperse on top. Drizzle olive oil (at least 2 tablespoons) over the dish, plus a pinch or two of sea salt.

  2. I have made a similar salad and I will say that it is DELICIOUS. Especially with some Greek green olives with pits scattered over the top.

  8. Oh, this looks so pretty! I would never think to combine those ingredients, but thinking about it, it sounds perfect for a spring or summer picnic! Definitely going to try it... now for the weather to actually warm up enough for a picnic!

  18. I am taking the citrus and herbs and ditching the red onions. Preggo belly occupant does not like that. But i think that PARSLEY and LEAKS would be an amazing addition, yes?

  23. Looks great! I will say that I'm a bit disappointed the series has strayed away from the classics; I liked the notion of a "best-of-the-best" recipes for those tried and true dishes (Mac & Cheese, Chocolate Chip Cookies, etc).

    I love the Forest Feast's recipe posts, though! A-maze.

  25. That looks delicious! But I'm still with the soup mode on. In the North of germany, where I live, the weather is... well, let's say that it's still Winter. I hope that the day or two in mid June that can be considered Spring we will be able to run to the park and celebrate with a picnic!

  26. I love citrus salads for a nice pick-me-up especially when winter seems to go on longer than it should.

    I like to add kalamata olives to mine. Also, to cut the bite from the red onions, I'll soak them in ice water for about 5 minutes.
