The Best (Coconut!) Hot Chocolate You'll Ever Have

My friend Sharon has three hilarious kids who are older than Toby, so she's always revealing genius motherhood tips when we hang out, and the most recent was how to make hot chocolate even richer and more delicious by stirring in coconut milk. How brilliant is that? Here's her secret recipe...

I came up with this recipe last winter when my family was craving hot chocolate, but I was running low on milk. I found a couple cans of coconut milk in my pantry left over from Thai recipes I had never attempted. So I threw them in the pot with some milk and chocolate. Turned out amazingly: The coconut milk gave the hot chocolate a rich, smooth, almost exotic flavor. In fact, when I tested it out for this post, my seven-year-old daughter seemed worried. She explained that restaurants will be mad because our hot chocolate is better and no one will ever want to buy theirs. I think that’s just about the best compliment she could have given me.

Recipe: The Best Hot Chocolate You'll Ever Have

You'll need:
2 cans 13.5-fl-oz. pure coconut milk
2 cups milk
1 tsp vanilla
1 12-oz. bag chocolate chips (2 cups)

Place coconut milk and regular milk in sauce pan on medium high heat for 5 minutes or until steaming. Add vanilla and chocolate. Stir until all the chocolate melts. Enjoy!

(Tip: I use whole milk and full fat coconut milk to keep the hot chocolate rich. Feel free to use the low fat options if you'd like!)

  25. I've made the chocolate chunk cookies and salted caramel brownies both twice now! Loved them both (the cookies are quite possibly truly the best I ever had) and love this series. Will have to try this hot chocolate too :)

  26. AGREE on the coconut! i don't have hot chocolate that often, but when i do, i go for a mix of unsweetened almond milk and unsweetened coconut milk. i highly suggest the combo! makes for a lovely non-dairy winter beverage.

    coconut is seriously the most awesome thing ever. coconut oil for cooking, shredded coconut in smoothies and with granola, coconut milk instead of dairy milk. so many great uses.

  28. I agree on the coconut milk! In fact, my daughter has a dairy allergy and I make our hot chocolate with only coconut milk. It is almost too rich, but delicious. I think next time I will thin it out a bit ith rice milk (no almond because we also have a nut allergy... boo!).

  37. Have you ever tried Nutella hot chocolate? All you do is heat the milk and add the desired amount of nutella and stir til combined. It's horribly addicting. This makes me wonder if combining the two would be good, bad, or just plain dangerous?

  38. I have one word for you: cocomotion. Seriously, the best hot chocolate maker ever...it's an electric stir plate that will mix the cocoa and bring it to the perfect drinking temperature. It's worth every penny.

  44. Oh my goodness this looks divine! My boyfriend has been tinkering with hot chocolate lately too (he won't let us buy the powdered variety) and in his latest version he added fresh mint. I will have to tell him about using coconut milk.

  45. Wow... that cup looks just heavenly. I'm dairy-free, so I may try substituting 2 cups almond milk for the regular milk. I think the results will be pretty tasty... Dark Chocolate Coconut Almond Milk. HELLO!

  54. Really great inspiration! I just made this with soy milk and melted dark chocolate, agave syrup and coriander powder for a healthier alternative. Half I had hot and for the rest I added some agar-agar to get an unbelievable delicious pudding :D
