The Best Broccoli Soup You'll Ever Have


Alex loves loves loves soup, and he always orders it at restaurants. (It's like his thing.) So when Momfilter wrote about this delicious broccoli soup that kids also beg for, we knew we had to try it (wouldn't it be perfect for winter lunches?)...

The Best Broccoli Soup You'll Ever Have
Recipe by Ariel, written by Yolanda Edwards


Our friend Ariel makes the most delicious broccoli soup which our daughter inhaled (and keeps asking for). When I asked Ariel for the recipe, she said she wings it every time, depending on how much she has on hand, but here's her very loosey-goosey recipe.

Recipe: Ariel's Broccoli Soup

You'll need:
1 onion
1 carrot
Olive oil
2 cups chopped potatoes
Lots of broccoli florets
Cauliflower florets (optional)
Vegetable stock
Salt, pepper, cumin
Grated parmesan or cheddar (optional)

Sauté 1 chopped onion and 1 large carrot in butter and a bit of olive oil. Add peeled potatoes that are quartered or eighthed depending on size of potato, resulting in 2 cups of chopped potatoes. Add broccoli florets and cauliflower if you like, loads of them. Add good quality vegetable stock (I like the Knorr pots). Top up with water so all ingredients are submerged. Add salt, pepper and a touch of cumin.

Simmer for 20 minutes. Puree in food processor. Serve with grated parmesan or cheddar on top.

  2. I am also a soup orderer at restaurants and it is funny how many people find it odd! This looks great will have to try for our soup Thursday's which is a common thing over here in Sweden!

  9. I LOVE broccoli soup, and this recipe sounds gorgeous! One of my goals for this year was to master several soup recipes, and it's the only NY resolution I've ever fulfilled! :)

  11. I tend to Asianize classic soups like this by adding a spoonful of Thai green curry paste and swirling in a wee bit of coconut cream...the kick is stupendous.

    It's getting cold here in Holland and my beloved Le Creuset pot is getting paraded out quite a bit for soup!

  12. That looks delicious (and I loooove that it's potato based...mmmmm). I'm a soup lover too, like Diana, in autumn and winter. It's funny though, bc I don't often order it at restaurants just because i feel like it's a "waste": almost as expensive as an entree, and you can't really share it with the table like an appetizer.

  21. This is exactly my mom's recipe for brocoli soup... for any vegetable soup actually.

    This works with cauliflower, carrots, zucchinis, turnips, leeks (just let them caramelize a bit)... almost everything. Great for a "clean the kitchen" round ;)

    You can also add a bit ok milk to make the soup less dense and give it a great silkiness, and play with different cheeses and spices...

  47. No offense but this is one of the most boring soups I have ever made. It makes a great BASE for the best broccoli soup ever but needs some serious doctoring up to stand on it's own. So so so plain and flavorless.

  48. I just gave this a go and while I like it I'd recommend being conservative with the water to match the texture above. I'd also say it's better to let the potatoes cook a while and add the broccoli after several minutes so you get that nice bright green. Mine turned out more of a pea soup color.

    I could see where most people would find this bland. I don't eat dairy so this was a good alternative to a creamy broccoli soup.

    1. We had this tonight and really enjoyed it.

      That said, I agree about using less water, and also about letting the potatoes and other veggies cook a little before adding the broccoli and cauliflower. After pureeing, I added a generous handful of cheddar and stirred it through.

  52. Ok, just made this. Added stock and then enough water "to cover the vegetables"... it's way too watery! Trying to boil it down right now. But it is quite bland, and I typically like soup! :( I'll be attempting to doctor it.
