The Best Buttermilk Pancakes You'll Ever Have

How do you like your pancakes? Plain with syrup? Mixed with blueberries or chocolate chips? Sprinkled with lemon juice and sugar? However you take them, a stack of warm pancakes is always delicious and comforting, and they're the best way to kick off a weekend. Happily, Adrianna from A Cozy Kitchen agreed to share her favorite recipe (and genius tips)...

On a hazy Saturday morning, the only thing I want is a fluffy stack of buttermilk pancakes. Making them from scratch is just as easy as the mixes. The recipe below is incredibly simple. Instead of using a whisk—which ends up with batter stuck in the center—I recommend using a fork. When it comes to mixing the wet ingredients into the dry, be sure not to overmix the batter. Over-mixing will overdevelop the gluten, which will result in rubbery, tough pancakes. Instead simply combine until you no longer see any flour bits.

Recipe: The Best Buttermilk Pancakes

You'll need:
1 cup all-purpose flour
2 tablespoons white granulated sugar
1 teaspoon baking powder
1 teaspoon baking soda
¼ teaspoon kosher salt
1 ¼ cup buttermilk, shaken
1 large egg
1 tablespoon unsalted butter, melted and slightly cooled
½ teaspoon pure vanilla extract

In a medium bowl, mix together flour, sugar, baking powder, baking soda and salt.

In a small bowl, measure out the buttermilk. Add the egg, melted butter and vanilla extract; beat until thoroughly combined.

Add the wet ingredients to the dry ingredients and mix until just combined, being sure to not overmix. The batter should have small to medium lumps.

Heat up your griddle (or cast iron skillet) over medium heat and brush with 1/2 tablespoon of butter. Scoop the batter, using a 1/4 cup measure (or tablespoon measure), onto the warm skillet. Cook for 1 to 2 minutes, until small bubbles form on the surface of the pancake, and then flip. Turn heat down to medium-low and cook on opposite side for about 1 minute, or until golden brown.

Transfer cooked pancakes to a baking sheet and place in oven to keep warm. Proceed with the rest of the batter until you're done. Serve with warm maple syrup.

Pancakes are easily modified, too. For heartier pancakes, consider adding ¼ cup whole-wheat, buckwheat, rye or barley flour, and decreasing the all-purpose amount to ¾ cup. If you'd like them a bit sweeter, simply add one to two more tablespoons of sugar. If you'd like to brighten them up, fold in fresh lemon or orange zest. If you're in the mood for fruit, add blueberries, raspberries or strawberries; instead of adding them to the batter—which will result in them sinking to the bottom—add them to the pancakes on the griddle.

  3. Oh! Plain with Syrup and Butter all the way! My future-father in law (one month to go!) always pushes whole wheat pancakes on us, and although I understand the logic behind it they are dry dry dry... NOTHING beats fresh fluffy pancakes.

  12. My husband made pumpkin pancakes for me on the morning of our wedding day.

    We sat and ate together and enjoyed the early morning before all the craziness started. It's still one of my favourite parts of the day!

    Plus, every time we have pumpkin pancakes now it totally takes me back to that morning and our special day. The warm rich flavour is so perfect for Autumn, or any time of year!

  17. YUM! The best pancakes I ever had were actually crepes, but I was staying with a friend in Austria who called them pancakes because her English teacher was French and yada yada yada. We put apricot jam on them, rolled 'em up, and stuffed ourselves until I thought I'd burst from all that deliciousness :) (Maybe you could do a post about the best crepes you'll ever eat!)

    My husband just made me pancakes last weekend and put flax seed in them...it was such a wonderful addition to add a little crunch b/c the seeds are the not that large and just have a little taste to them.

  23. omigoodness! pancakes are one of my weaknesses for sure. i am a huge 'breakfast at any time of the day' kinda gal. i love mine with chocolate chips in them with drizzled warm butter and warm (it must be warm!) maple syrup =)

  24. i LOOOOOOVE pancakes! i always have to have butter and syrup on mine. my husband never puts butter on his and i just can't wrap my mine around that! sometimes, if i'm in the mood, i sprinkle some chopped walnuts or pecans in the batter on the griddle for a little crunch and texture. SO GOOD!

( Also, I think you make your own buttermilk with mild and a teaspoon of vinegar (google it) - I never have buttermilk on hand.)

  28. I've been with my husband since I was 14. And every since we were children my Mother-in-law has been making us her delicious pancakes. Whenever I have, make, or see pancakes I think of her. Because honestly, hers are the best. I love that she taught me how and gave me her recipe. After we got married she snuck a pancake griddle onto our moving truck. When we unpacked we found the same griddles she uses with a special note. I love pancakes!

  39. That's so funny. I made pancakes the other day (my family's modifications of this exact same recipe, minus the vanilla, which is genius!) and thought, "I wonder if Cup of Jo is going to do pancakes, because these pancakes are surely the best."

    On my first pancake, I like an over-easy egg, and then something sweet and homemade (chokecherry syrup or raspberry jam) on my second. xox

  46. Pancakes are a battle in my house. I love fluffy cakes, hubby likes them flat and slightly burnt (in fact, I met him while I was waitressing my way through grad school. He used to come into the cafe I worked at and would order four flat pancakes instead our traditionally three fluffy pancakes). I'll save this recipe for when I have a night to myself (because pancakes taste better at dinner).

  51. If you take out the buttermilk, and the butter, and a tablespoon of sugar, you can get some really good Pancakes. It's the kind I use, I just butter them up and it's like buttermilk without actually having to buy buttermilk. They really are simple to make, I moved from my hometown and they didn't have my favorite diner with my favorite pancakes, so I searched for a recipe and now I never buy mix.

  55. We just started making all of our own jam so we skip the traditional maple syrup and butter and pour jam on pancakes. Last Saturday morning was Cherry Almond jam with buttermilk pancakes and this weekend we're going for Strawberry Lime jam with buckwheat pancakes. I may even attempt to make blintzes on Sunday morning for a bunch of 11 year olds, depending on how late they keep me up at the slumber party Saturday night!

    My husband makes the best buttermilk pancakes! He uses Martha Stewart's recipe. I can't wait to have him try this recipe for comparisons sake (sigh, it's good to be a taste-tester!) My husband makes them at least every Saturday (and often on Sunday too--I usually can't do it--too often and they aren't as special!) He slathers them with peanut butter and syrup (which is pretty good, actually...lately I've been smitten with the cookie butter from Trader Joes :D)

    However, one of the best tips he has (beside whipping the eggs separately) is that once you get the hang of it, you may need to add more liquid or flour to make sure the batter is the right consistency (it can depend on the humidity). That way they always turn out light and fluffy. He usually makes them with 1/2 whole wheat flour, and they are never dry. I will have to ask him to put a little vanilla in. That sounds yummy!

    I have struggled with pancakes for YEARS (too thick...too bland...too cakey...) and finally have found an excellent pancake recipe. They were delicious which is a great sign since nothing normally tastes as good when you make it yourself :)
