Whoa! Did you know that you shouldn't saute at high heat with olive oil? It can release toxic smoke above a certain temperature. So, Abbey recommends avocado oil, which works perfectly for high-heat cooking and tastes great on salads.

This is only true if you heat oil to smoking, which is very rare. Read the comments of this article, a lot of science has been omitted!
I read an article about that last week and I was shocked as well. Somehow I always thought that using olive oil for cooking is the healthiest way but it seems that it might be even dangerous. I'm totally going to try this avocado oil. Sounds really good:) Thanks, Joanna

I did not know that!!! Woops! I do use avocado and olive oil as a conditioner for my dry/damaged hair though! It works miracles!!!

AND I've heard coconut oil is great for your skin as a lotion, or to take by itself, or to add to smoothies.. Have not tried it yet, but when I go to the local farmers market today, I plan on picking some up!
regardless of olive oil's danger or not... avocado oil sounds fantastic & I'm going to have go get some to try now!

I use coconut oil on my skin and avocado oil on my face, they are both great! You can also take you make-up off with avocado oil! I have been meaning to try both on my hair!
just the sound of avocado oil is amazing. i haven't tried it but i have seen it at whole foods. even if the science isn't true behind it, trying something new is always fun. :)

my family has olive groves and produces oil here in CA and i, of course, use the oil all of the time. i think as long as you don't let the oil smoke (has to be SUPER hot for this to happen), it's fine. i LOVE avocados and can't wait to try the oil!

i also use coconut oil for cooking, it has the most amazing aroma. it's also good spread on toast (like butter) with honey on top. it's very nutritious. i use jojoba oil on my face in place of moisturizer, it works wonders for acne.
Heated Olive Oil or any type of oil for frying is never good for the health, that what my doctor said to me. Being Italian (and living in Italy) I am blessed to use olive oil a bit in my salad everyday (it's good for the health) but I usually avoid fried food since it's not very healthy. I never tried Avocado oil,thank you for the tip. I wonder how it tastes. - Barbara

WHOA this is crazy I was just writing this same blog post today lol. I just watched this guy from Kuwait make a lecture on this. He said the olive oil from Spain is the worse bc they do not cold press. BUY COLD PRESS olive oil everyone. The high heat makes something almost like GAS so its bad to have. You can use it on low heat or add water which is what I have started doing.
Wow, as much as I'd like to be the healthiest person ever, it's extremely unlikely that I'll ever give up cooking with olive oil.
I ought to try avocado oil for salads though. That does sound delish!

Just saw this at a farmers' market... and it sounded so YUMMY. I'm an olive oil fiend and even use it, straight up,on my hair and skin. But have always wondered about the temperature limit for cooking... interesting and very good to know. I'll hop over to the market and try out the avocado oil (there's a local company that makes some)... thanks for the heads up!
Also I think it's important to realize he is talking about EXTRA VIRGIN OLIVE OIL - I would never use this for frying or sautéing but there are other oliv oils which are not extra virgin that can definitely be used

Agreed! Avacado oil is a great alternative! We use coconut oil too. I think my husband favors the coconut oil, but I like using avocado oil best!
I agree with all who mentioned COCONUT OIL! Not only does it have a higher smoke point than olive oil, but its very affordable and has many more uses. I split my jar into one container for the kitchen and one for the bathroom then use it as an epic and non toxic moisturizer, conditioner...lubricant ;)

If you add a bit of butter to your olive oil when using for frying it helps because butter has a much higher cooking temperature. Then you still get the flavor and health benefits of olive oil. Although I will try the avocado oil too - sounds yummy!

Any oil is dangerous if heated past its smoking point. Olive oil has a smoking point at about 200 degrees CELCIUS, which is pretty hot. The better grade the oil, the hotter you can get it before it smokes. You don't want to fry with olive oil or any low smoking point, but it is fabulous for baking, saute, etc.
I also read about the ill health effects of heated olive oil in cooking- equated that to being worse than butter (!?!). I just can't believe that cooking with butter would be healthier than olive oil! That blows my mind..

to anyone who whant to read this comment as a particular opinion:
as spanish, cooking all my life with olive oil, i can assure you olive oil is pretty safe even in high heat....anyway, it is not safe for your health to eat only fried foods, or to fried in very heat oil, so try to fried in medium heat, never more than twice a week.
PLease, never, ever leave any type of oil got so heat that get fumes from it....you burn the oil, and also, burn the food inside it...
And about the cold press of the oil....you can find with some research that there are some different forms to extract the juice from the olive oil fruit, so please,Noor, get some information before saying things so crazy and generalistic about spanish oil or anywhere oil...don´t generalise so easy....you may get wrong easy also...
If you get fumes from the oil, you burn it before use it....try to heat it as high as the olive oil changes to really liquid, but not more...

I'm surprised no one has recommended rice bran oil.. this is a cheap oil that has a high smoking point and is flavourless so won't alter your dish with another subtle flavour as other oils might.
While on the topic of oils, consider spraying your oil onto your food. You'll get more coverage and use less oil than pouring it on.
coconut oil is also a great alternative!
Here's another tip if you want to saute with olive oil - ad a knob of butter to it; it has a higher smoking point so it will keep the olive oil from getting too hot. Not to mention there is nothing better than butter, right?

Grapeseed oil has a higher smokepoint than Olive oil too and it has a very neutral flavor.

yes, that's true, but if you are cooking with olive oil at such a high heat then you are using it improperly anyway. hope some readers do a little research on their oils, not just buying the next trendy oil to hit the market!!

Grapeseed oil can be heated to very high temperatures and sesame oil as well (as long as it is the untoasted variety).

My nutritionist told me to not use extra virgin for cooking as it evaporates faster, but using regular olive oil (which is way cheaper!) is totally okay. But I'm sure everyone has their own opinion. I just hate buying expensive oils to cook with as I use it so often, but dang, I bet avocado oil is delicious.

I'm very surprised at this post. The information given is not very strict, I believe, though I'm not a scientist, anyway. I'll only tell you my personal experience: at home there's never been anything but olive oil for cooking... and all of us are completely healthy.
My granmother was a cooker and she always said she preferred to have less food and keep the olive oil than cooking without it. Obviously you don't have to let it too much on the fire, that's all, if so you're burning it (the smoke is the signal).
I'm writing from Spain, one of the world's main productors of olive oil if not the first. Olive oil is a basic product in all Mediterranean countries, which diet has been proved excellent for health in many investigations.
Here, decades ago, it started being said that all other oils were better than olive (soya, corn...), just to make it go down in price and let companies buy it cheaper in origin and then sell it more expensive.
The information given on your post reminds of this episode my mum uses to relate: maybe to promote avocado oil? (which I haven't tasted, it may be good or not, I don't know.
