Make your own cheese!

Claudia Lucero moved to Portland in search of slower, happier life. She started pickling vegetables and making cheese, and now she runs an etsy shop with DIY cheese kits! You can make the fresh cheeses in your kitchen in under an hour with just a gallon of milk.

I'd LOVE to try these, wouldn't you?

That is one of those coolest things ever! I recently made homemade ricotta using Deb's from Smitten Kitchen recipe. There is something about cheese-making that I truly enjoy....probably eating it later..hahah. Kisses, Joanna

oh Portland! I'm from here and it seems there are so many wonderful new businesses and people trying out local, organic and eco-friendly products that this cheese company would do well here.

That is so cool! Just like Diana, I tried making Deb from Smitten Kitchen's homemade ricotta (I served it on grilled crostini with shaved zucchini and a drizzle of balsamic - then I swooned) - next on my list is Sunday Supper's recipe for homemade burrata. I think I might have to add these kits to my arsenal!

annalise, haha, i know! it's true -- even flight fantasies aren't perfect. claudia i think still has a day job. but she sounds like she has a good scene set up for herself doing what she loves! :)

I've never made goat cheese, but I made mozzarella and ricotta in culinary school. Mozzarella can be tricky to make, because you have to boil the curds in water and kind of pull the melted cheese into a ball. It's delicious though!

Oh me, Oh my! I just checked out her site! According to the ingredient list she uses vegetable rennet {animal friendly} which is wonderful. I'm curious if I can use soy milk as well because my vegan face misses cheese like a mofo!

They sell those at my local Portland Co-Op!! They are so much fun to give as gifts and are delicious (which makes you feel awesome about your culinary skills).

Holy cats, I want to take that class!! I took your advice and made a great stinky cheese birthday plate for my fella. The Stinky cheese shop in Boerum Hill has been re-vamped and it's twice the size and twice the cheese - pretty awesome.

Mozz and ricotta are two of the cheeses best for beginners to try making themselves. My mom has a jersey cow and milks her twice a day and gets about a gallon of milk a day. She has so much milk and her and my family can't drink it all fast enough so she started making mozzarella and ricotta cheese. She also sells the milk but still has endless gallons in the fridge. She's starting to make cows milk soap now and I can't wait for her to send me some! I'm trading her pounds of coffee for cows milk soap.

Oh I took a goat cheesemaking class with her, on a whim, through a local community college! It was so, so much fun and surprisingly easy and yummy(and I don't even like goat cheese, normally!). Get the kit! Do it!

gotta love this!!! I absolutely adore cheese. I could live of eating only cheese and drinking red wine!!!

In Portugal we have lots of diferent stinky and strong flavoured cheeses. Each region has it's own special cheese... What's your favorite cheese, Joanna? (I don't know if I can answer this question, with saying only one)

My friends and I made our own paneer cheese - SO good and such a fun thing to do together. Thankfully my besties are cheeseheads like myself. My mom got me into the whole cheese-making thing and even started a cheese-making blog :) xo

I have this kit! I got the biggest one from my fiance for Valentine's last year. It is so much fun and very easy to get started. All you need is milk! I did a bloggy blog on my experience with the kit aaaaages ago when I made goat cheese. Basically? Best thing ever. Plus you feel like a magic culinary genius. Also, very useful skill should the zombie apocalypse ever occur.

haha, these comments are cracking me up :) totally portlandia, haha. macaca grava por cima, my fave cheese is probably Fromage D'Affinois (buttery yet light for the summer, great with white wine) at the moment....but it changes all the time :)
