Popsicle molds

Today, New York is going to reach a whopping 98 degrees, so we're going to stay inside, crank up the AC and make popsicles. How fun are these sailboat, rocket and castle molds? You're never too old. :)

We're on the same wavelength. Inspired by Smitten Kitchen's post on fudgesicles, I picked up some popsicle molds and headed into the kitchen. OMG, they're so, so, good! My kids and I were in popsicle heaven. Might have to find that sailboat mold. It's adorable.

These are some pretty fun popsicles! Nothing says summer like a hot afternoon and a yummy popsicle!

Awesome! I especially love the sailboat. I just tried making sorbet in my ice cream maker. It is delicious and SO easy. Only water, sugar and fruit.

I cannot even take the heat! Thank goodness my office building cranks up the A/C so high that I'm actually cold. These poppies look delish. (I still call 'em poppies:)
BTW: My word verification is "Zinifull." NOT that I'd EVER drink White Zin, but wouldn't WINE POPSICLES be a fantastic idea?! That's IT! I'm going to make some this weekend. Stay tuned!

I just read a great article in Rachel Ray Magazine for popsicle recipes!
This one sounded particularly good: Double Berry Ice Pop
INGREDIENTS:
2 1/2 cups blackberries (about 6 oz.)
2/3 cup sugar
1 tbsp. fresh lemon juice
2 1/2 cups raspberries (about 6 oz.)
DIRECTIONS:
In a saucepan, bring the blackberries, 1/3 cup sugar, 1 1/2 tsp. lemon juice and 1/4 cup water to a boil; let cool slightly. Transfer to a blender and puree. Strain through a fine-mesh strainer set over a bowl; discard the seeds. Refrigerate until cold. Divide the mixture among the molds and freeze until partially frozen, about 1 hour.
Meanwhile, in another saucepan, bring the raspberries, the remaining 1/3 cup sugar and 1 1/2 tsp. lemon juice, and 1/4 cup water to a boil over medium-high heat; let cool slightly. Transfer to a blender and puree. Strain through a fine-mesh strainer set over a bowl; discard the seeds. Refrigerate until cold.
Divide the raspberry mixture among the molds. Insert the sticks, piercing the blackberry layer, and freeze until solid, about 4 hours. Run warm water over the molds to remove the pops.
