Delicious. Honeycrisp were my favourite until I tasted an Ambrosia this year [I had never heard of them previously]. It isn't even close now in terms of my favourite.
We get some amazing Honeycrisp apples here in WA. My favorite is to pair them with a good brie, the triple creme kind that I get at whole foods that and a glass of chardonnay. I always bake at least two apple pies in the fall using only Honeycrisp; they always turn out the best.
If you love honeycrisps and cheddar try my fave sandwich in the fall/winter! spread whold grain dijon on 2 slices of whole grain bread. Then put a cheddar on each slice and a thin slice of honeycrips. Then grill it like a grilled cheese. The best combination of flavors!

my son and i like to dip our honeycrisps in yogurt for lunch (sam thinks everything is better with dip :)). he gets yobaby vanilla and i have lemon yoplait.

Apples and cheese are one of my favorite meals year round. I stocked up on Honeycrisps at my local cider mill and am loving them! I also love a wonderful ripe pear with some strong cheese (Danish Blue, etc.) or honey drizzled over the same cheese. This is making me very hungry!
