Yummy sandwich

Alex is hanging out with a friend tonight, so I'm on my own for dinner. I spotted this aged cheddar and apple melt on She Eats Bears, and it looks great, especially on raisin bread. I think I'm going to try it out.

What do you make for yourself when you're eating alone?

  1. I never thought about raisin bread. That's perfect. I've had grilled provolone cheese with pear which is YUM! I saw one grilled cheese with chocolate and had to try that too. Double yum!

    Not sure if this is good or bad. I always get lost in working and set an alarm on my phone to remind me to start cooking lunch and dinner for my brother and boyfriend to come home and eat. So I guess if they weren't eating with me, I would kind of forget and end up not eating, or eating M&Ms. So bad.

  9. Salads! My current fave is a modified Cobb with mixed greens, hard-boiled egg, avocado, blue cheese, bacon, grape tomatoes, croutons, and Dijon vinaigrette...yum!

  10. Awesome. Reminds me of this super-yummy combination, too: Grilled Goat Cheese sandwich with Fig and Honey. (Raisin Bread with goat cheese, lemon zest, fig preserves, basil...and a sprinkle of powdered sugar on top! Decadent.)

  12. What?!!! That looks CRAZY good!!!! My go to meal during pregnancy has been grilled cheeses of all kinds. Never liked them before and my husband won't eat them, so thats what I eat when alone. :) Enjoy the crap out of it.

    Most Monday's Balazs works late so I have this little tradition of having a sushi and then I make myself a tray of chocolate chip cookies....and eat them all up while watching Seinfeld! ( how much I love that)

    My go-to single meal is tofu stir fry with a multitude of sauces; boring but delicious!

    My favorite quick dinner is roasted broccoli with pasta and parmesan. So easy and so so good.

  20. That looks amazing. When I'm eating alone, I SHOULD create things with lots of veggies, since my man is not the biggest fan and I love them. But if I'm lazy, I'll just resort to a box of mac n' cheese...gourmet style, with lots of fresh herbs, garlic and drizzled truffle oil! :) xo

  21. When J is out for the night I almost always make myself some pasta with my Grammy's sauce. She made it really sweet and he practically hates it (he also just doesn't like pasta at all!) so I have to take the opportunity to get my fix. =)

  27. Oh my...that makes my mouth water.
    I'm going to be honest and say that if I get a night alone sans my tot and Hubby (which is INCREDIBLY rare) I usually get takeout or go out to eat with a nice book to read. I know...it's shameful.

  30. Ohh, that looks so good! I am 36 weeks pregnant, and on nights like tonight when my energy is low, one of our staples is grilled cheese made with wholegrain bread, pesto, roasted red pepper, aged white cheddar, and goat cheese. Yum!

    When I'm home alone I usually alternate between acting like the bachelor (although I should say bachelorette) stereotype and ordering in a pizza , or going way fancy with little finger foods and a martini. Depends on whether I'm trying to be as girly as possible since there are no boys around, or if I'm just feeling lazy and no one is home to be the wiser of my loafing ways.

  39. marinated tempeh sauteed with onion and lacinato kale in basalmic vinegar and bragg's liquid aminos over garlic ravioli! my husband doesn't like kale or tempeh so it's my favorite dinner for one recipe.
    that sammie does sound good. i'm thinking maybe a melt version on cinnamon raisin bagels!

  49. Yum! I have to try this with the raisin bread - can't believe I never thought of it since cheddar and raisin bread are to of my favorite foods! Yum! When I am eating alone I usually make grilled salmon, haddok or scallops with mashed potatoes and cole slaw - childhood favorites my hubby doesn't like at all! But sometimes it's just cottage cheese with veggies and italian dressing...

  53. I eat Kraft macaroni and cheese beef jerky and ice cream when I'm home alone. Contrast this to my boyfriend who makes himself pork tenderloin with asparagus and balsamic glaze.

    I am totally the bachelor in this relationship.

    It reminds me of a favorite sammich I like to make... I do big chunks o' brie with sliced pears & caramelized red onions - then grill it up.

    If I'm feeling lazy I'll just do brie with jelly - my sister makes a strawberry rhubarb jam that goes AWESOME with it!

  77. Ironically, I was eating dinner alone as I read this post; therefore, I will tell you what I was eating: my grandmother's canned pork with BBQ sauce, mushrooms, and green peppers all wrapped up in a whole wheat soft shell...mmm. Reminds me of home.

  89. I adore a good grilled cheese sandwich. My favorite pub in Philly, Prohibition, always has a new combo. The raisin bread sounds delicious!

    When I'm home alone I do snack meals if there are no leftovers to use. A little of this, a nibble of that...lots of carrots and hummus, walnuts, maybe a half sandwich or toast, or maybe just ice cream :) It's difficult to want to actually cook something!

  95. Ah! I actually always attempt a grilled cheese when I'm alone but I almost always burn it. It is the oddest thing really. I am a really good cook EXCEPT grilled cheese. For the life of me...I will cook one non burnt grilled cheese sandwich in this lifetime :).

    Yet tonight (home alone), I am making chicken.

  122. I make a spicy salad with bulgur & prawns...It's a recipe from Michele Cranston, who was before Food Editor of Marie-Claire Australia and it's to die for and super easy to make.

    I actually made heaps of it last Sunday for Mila's B'day...enough to feed 14 kids + 24 adults

    What I eat when I'm alone varies. Recently, I am continuously preparing the same snack--one peeled and chopped apple with lemon juice and sugar. This recent ritual began with thoughts of apple pie. It seems I enjoy the pre-cooked apple pie filling better than the pie itself. I feel the same way about cookies...

    And rhubarb. I can't stop eating rhubarb.

  141. Darling am single, I eat alone everyday!...ok slight exaggeration, I eat out with friends quite a bit. Actually this pizza place where I live just started a ladies night on Wednesdays. So yesterday I had some yummy pizza, for free! When I eat alone I make quick and simple meals like pasta and pesto, rice, salad. Being a London girl, living in Venice, I think it's my duty to try as many Italian dishes as I can.

    I usually have 1) white rice cooked with soy milk (a lot!), add cinnamon and sugar 2) sliced cucumber and cheese sandwiches 3) a baguette with your favorite cheese or herb spread 4) a nanner and peanut butter sandwich!
